    Instructions

    1. Preheat the Oven

o Preheat oven to 400°F and grease a one-quart pan.

    2. Prepare the Cream Sauce

o In a medium saucepan over medium heat, melt the unsalted butter.

o Add the minced garlic and sauté until fragrant, about 1 minute.

o Stir in the all-purpose flour to form a roux, cooking for 2 minutes.

o Gradually whisk in the milk, ensuring a smooth mixture.

o Add the fresh thyme leaves, salt, and ground black pepper.

o Continue to cook, stirring frequently, until the sauce thickens, approximately 5 minutes.

o Remove from heat and stir in the grated cheddar cheese until melted and smooth.

    3. Assemble the Dish

o Layer half of the thinly sliced Little Potatoes in the greased pan.

o Sprinkle half of the finely chopped onion over the potatoes.

o Pour half of the cheese sauce over the first layer.

o Repeat the layers with the remaining potatoes, onion, and cheese sauce.

o Top with grated Parmesan cheese and a sprinkle of sweet smoked paprika.

    4. Bake

o Cover the pan with aluminum foil and bake in the preheated oven for 60 minutes.

o Remove the foil and continue baking for an additional 20 minutes, or until the top is golden brown and the potatoes are tender.

    5. Serve

o Remove from the oven and let it rest for a few minutes.

o Garnish with chopped fresh parsley, chives, thyme leaves, and a dash of paprika, if desired.

o Serve warm as a side dish.
