    🥔 5 lb russet potatoes, peeled & diced into 1-inch cubes
    🥚 4 boiled eggs, whites chopped
    🥄 1 cup mayo
    🥄 1 tbsp yellow mustard
    🥄 2-3 tbsp dill relish or dill pickles, diced into small cubes
    🌶️ 1-2 tbsp Cajun seasoning
    🧅 1/2 cup green onions, chopped
    🌶️ Paprika, to taste
    Instructions:

    1. Boil Potatoes:
      • In a large pot, boil the potato cubes in heavily salted water until tender. This usually takes around 15-20 minutes. Ensure they don't get too soft as they'll continue cooking with the residual heat.
