An easy to cook Eggplant recipe just for you

    Greetings dear Hiveans !! Good food is something one craves for. And supposing if its fresh from the garden gives a different taste and aroma, and infact chemical free.

    Today I would like to bring an egg plant recipe, freshly plucked from my garden, to your dining table. Its a tasty and spicy dish, perfect for bread and rotis.

    So let's start cooking. Though I cooked this two days before, could post it only today, as I was a bit busy.

    INGREDIENTS REQUIRED:

    • Eggplants - 6
    • Garlic - 2 or 3 cloves
    • Onion - 1
    • Green Chillies - 2 spicy
    • Tomato - 1 (cubed in small portion)
    • Tahina (Sesame paste) - 1 table spoon
    • Virgin Olive oil - 2 table spoon

    COOKING INSTRUCTION:

    STEP - 1

    Wash all the vegetables thoroughly in salt or turmeric water. Let them drain off. The first process is to burn the Eggplants in stove. It should be burnt well, turning the colour to black. Don't worry! the inner pulp will never get burnt. Keep aside, let it cool.

    Keep rotating it in the flames so that it gets cooked evenly.

    This is how it looks after burnt. The inside will never be burnt.

    The same way garlic and onion could be burnt, with the help of a fork or a strainer type spoon, so that your hands dont get burnt, just for two or three minutes.

    STEP - 2

    Once the Eggplants are cooled, peel the skin off. This can be easily removed by your bare hands. Just wash them lightly inorder to remove the burnt skin, if any, sticked on to the brinjal. Now cut them into cubes.

    Peel the skin off the garlic and onions. Wash them lightly and keep aside.

    STEP - 3

    Take a mixer jar and grind the peeled Brinjal, garlic and green chilli. Add Tahina or the sesame paste to it. Make it a thick paste. Do not add water. Once done, just add the onion (finely cubed) and grind them coarsely. So the mixer process is over.

    Now remove them from the mixer and spread them in a bowl.

    STEP - 4

    After spreading them in a bowl, the last process is to add olive oil. Just pour all over the recipe and garnish with chopped tomato.

    Finally, its ready to eat along with bread or roti.
