Kransekake traditional festive Norwegian sweet .

    Happy New Year 2025 to all hiveans.
    In Norway, Christmas is a time filled with joy and delightful foods. Many traditional dishes and desserts are prepared for family and friends, and there are specific items that are essential for baking during this season. One very special treat is Kransekake, a tower cake or cookie made from almonds.

    I would have made these cookies and cake from scratch if I were in Norway. However, since I'm in India, it's not so easy to do that. Instead, I brought some ready-made dough from Norway to make my work easier, and today I used it to bake these fabulous cookies. They are delicious but very easy and if you buy ready-made dough then it is super easy to make them.
    If you want to make your own dough need
    1 cup peeled almond coarse powder
    1 cup unpeeled almond coarse powder
    3 eggwhite
    1 and 1/4 cups powdered sugar
    1/2 tbsp rice flour
    1/2 tbsp cornstarch
    1 tsp gum Arabic.
    pinch of salt
    Combine almond flour, gum Arabic powder, a pinch of salt, and sugar in a bowl, mixing them thoroughly. Then, add the egg white and continue to mix until a sticky dough forms. Finally, sprinkle some rice flour and cornstarch on top. Cover the mixture with plastic wrap and let it rest for at least 6 hours before using it to make cake or cookies.

    I have this ready-made it is ok But it is not like the homemade taste.
    I made it using these ingredients:
    Kransekake dough
    Chocolate sauce
    sugar glaze made from powdered sugar and lime juice.
    Decorative sugar sprinkles.

    These are the ingredients on the package But homemade dough has 60% almonds here they have 34% almonds and more sugar and flour.

    The texture is like normal cookie dough.

    Taking the appropriate portion of dough I roll them in my hands like sticks shape.
    to bake them I have special molds in Norway, but not here.

    I made some rings and some sticks. Normally Krasekaker is made of more than 16-18 rings. but our oven is not big enough her so I had to limit the size.

    For some rings, I made small cuts using scissors.

    Here they are ready to bake. I made some designs using a fork.

    I baked them for about 15-17 minutes at 180 C preheated oven they burn very fast so better to be around to keep eyes on them.

    after 15 minutes I checked them and 2 minutes later they were done.

    while they were cooling I made chocolate sauce.

    For chocolate sauce
    Ingredients:
    2 tsp milk
    2 tbsp butter
    1/3 cup sugar
    1/3 cup cocoa
    1 tbsp cream

    In a pan dissolved sugar in the milk and boiled on low heat.

    After the sugar melted added cocoa

    Added butter and cooked for 1 minute

    Removed from heat and added cream.

    I stacked the kransekake using 10 rings.

    I dipped one end of the sticks in the chocolate sauce.

    When the chocolate dried I made a glaze of powdered sugar and lime juice. and decorated the cookie sticks and krasekake sprinkled some sugar sprinkles.
