Here's my Favorite Carbonara Recipe

    Hi friends. Let's make the most delicious carbonara in the world. In today's recipe, we won't be using cream. This is one of my favorite carbonara recipes. Although I sometimes make additions to the ingredients depending on the season, the main ingredients never change. The only ingredients we need are spaghetti, 2 eggs, pancetta, Parmesan cheese and pepper. You can use other ingredients instead of pancetta if you prefer. Parmesan cheese is usually essential for me,but it's not mandatory. Any hard, local cheese can be added instead. Before we move on to the preparation, let's take a look at the ingredients and quantities.

    Ingredients for Carbonara:

    1 packet of spaghetti
    2 eggs
    2 slices of pancetta
    100 grams of Parmesan cheese
    salt and pepper

    That's all!

    Instructions:

    Firstly, let's chop the pancetta. It doesn't need to be very thin, but overly large pieces won't work well either. Choose a side of the grater that you haven't used before to grate the cheese. This way, the cheese will resemble snowflakes and melt faster when preparing the sauce.

    Carbonara takes its name from the miners in the Italian province of Carbonari. They discovered this dish as a means of escape from the harsh mountain conditions.

    Now let's move on to preparing the base of the sauce. We'll need 2 egg yolks and 1 egg white.

    Next start frying the pancetta.

    Once it's crispy, set it aside and cook the pasta according to the instructions on the packet. Be careful not to overcook the pasta.

    In the classic recipe, spaghetti is a must, but any type of pasta can work, the important thing is that they are made from hard wheat.Some might prefer other types of pasta over spaghetti, so don't hesitate to experiment with different kinds.

    After the pasta is cooked, drain it and reserve some cooking water. Add it to the pan where you cooked the pancetta.

    Then, gently mix and add the egg mixture. Stir everything until the carbonara sauce thickens.

    Finally transfer the dish to a serving plate, sprinkle Parmesan cheese and a bit of pepper on top. I think it pairs well with a glass of wine. If you don't consume alcohol, fruit-flavored and lightly sweetened beverages like lemonade can complement carbonara nicely. Of course, drinking water with carbonara is always a good option. Water can help you fully enjoy the flavor of carbonara and aid digestion.

    If you make carbonara with pancetta like this, you can serve it as a main dish. Some greens can create a good balance with this dish. You can also make a light salad to accompany it.
