    Good evening hivers and lovers of healthy vegan 🌱 delight ❤️! Hope you are all enjoying good health.

    Am happy to be here again friends with another healthy recipe very perfect for a cold 🥶 day,. Spicy Mint Leaves 🍃 Soup 🍲I prepared with some spices and balls of potatoes. I could never believe how good it tasted.

    The weather just keep surprising us with the changes the global warming is making. We ought to be preparing to set for early summer but here we are with rains ☔️, bringing the sun to a halt and stand still. But we are ever ready especially with spice and fresh mint leaves 🍃 in season.

    And unexpectedly this noon, the weather turned into a cloud of rain ☔️ and in minutes it began to pour. Thanks to the pantry with always having something to offer us. And as I went around it, I was able to gather ingredients for a quick soup that suits the weather.

    Here I take you to show you the step by step for making this delicious soup 🍲

    INGREDIENTS:


    Some fresh mint leaves 🍃
    1 ball of medium onions
    1/2 teaspoon of black pepper
    1/2 teaspoon of turmeric
    Cloves of garlic
    1/2 teaspoon of curry powder
    1:2 teaspoon of dried thyme
    Medium size sweet potatoes
    1 teaspoon of chili paste
    Salt 🧂 to taste
    1 tablespoon equivalent veg oil.

    STEPS FOR PREPARATION:

    Step 1.

    Wash thoroughly the mint leaves 🍃, slice and keep ready.

    Step 2.

    Then cut the potatoes into sizes to enable easy peeling.
    As above .

    Step 3.

    Peel and chop into tiny squares

    Step 4.

    Then will soak it for awhile to remove some starch.

    Step 5.

    Washed the onions 🧅 and garlic 🧄 to slice them readily.

    Step 6.

    Will set to prepare the soup by adding the potatoes in a pot, set it on the cooker adding the salt . Then cover the lid to boil faster.

    Step 7.

    Once the potatoes starts boiling, I will add the black pepper, turmeric, the curry powder and dried thyme.

    Step 8'.

    Stir it to incorporate all the spices adding the chili paste. Allow to cook along.

    Step 9.

    Once its cooking 🥘 and drying, I will add the vegetable oil, the mint leaves 🍃, the onions and garlic.

    Step 10.


    Stir properly to bring them to even incorporated. Then allow for just few seconds and set it down.


    And now how nice to enjoy this with the cold weather. Hot and steaming, spicy 🌶 to suit the rain ☔️. You can’t imagine how delicious this turn out to be. The mint flavor and aroma really the ideal spice for the weather. I recommend this recipe to you guys. You will never regret preparing it to enjoy a rainy day.
