Taco Tuesdays ~ Fried Cow Lung

    Every Tuesdays is TACO TUESDAYS time!

    Welcome everyone too my Taco Tuesdays post, this is my routine post in FreeCompliments Community.... A special themed one for tuesday, and it is not about TACO, but about any food I have that sparks joy like having the TACO!!!

    Today food I pick is Fried Cow Lung. It's a common food in Indonesia, and I believe for South Eastern Asia is a common food too... however not a common for some Northen part of Asia and for Westerner too.

    We like to eat innards of the livestocks, which I believe in some part of this world is considered as waste or part for making pet food. For me, Innards that I like is Brain, Then Lung, Intestines and Tripe. I don't like eyes, lever, or testicles... yes people eat testicles here.

    Of course I can not display all of them here, I do not have the capacity to eat them all in one go... So for Today its LUNG!!!

    My Order

    This is my order, the fried lung with an eggplant as the side dish. The food itself is cook with Javanese or Sundanese Style... Mostly we braised the meat or innards and marinated them in the same time. After for some time, usually hours, when we believe the seasonings have been absorbed into the meat and the aroma is thick, we can deep fried them directly.

    However things are a bit different with vegetables. We usually just boiled them, or braised for a short time then quick fried them like the picture above. My order is Terong with Sambal, which is actually you can find it everywhere in Indonesia. If you call this as Terong Balado, then it is a Padangese or Minangese food, if you call it Sambal Terong, mostlikely it is a Sundanese. This one I ordered as Terong Goreng, so its a Javanese.

    Another reason I believe this is a Javanese one, is because the sambal or chili paste is not so hot or spicy. Chili is definitely spicy, but this one is not. It's a tipical of Javanese who love sweet food, so some part of Java still make sweet chili paste like this.

    Well I guess most Asian love sambal or chili sauce or chili paste. And there are some regions that demand a solid spiciness. Because my parents are not from same region, I have a big tolerance on how food are cooked and how the taste.

    Speaking about Fried Cow Lung, there are two type of how it is served. This one is the most common one, you slice it not to thin but not thick. Then you deep fried it until it get really dried like a thick bacon. Most of the taste was sweet and sour. If you cut or slice it thinner, you can make lung crisp and its pretty famous here.

    However I like the second edition, which is the soggy one. You cut or slice the lung thicker and you braise them with seasoning then saute them. It will be soggy like a tofu, but the taste is stronger. Some people do not like this because it tickles your mouth with chewy springy sensation.. And it's hard to find this cook in cheap outlet, because cheap outlet depends a lot on deep fried and chili paste only.

    THE SCAM

    Wait... we are talking about food right? this is Taco Tuesdays, so what the heck is this scam thing?

    Well I got scam in this outlet... as you can see above, I ordered Sweet Ice Tea and almost 70% what I got was crushed Ice Cube. This is what I call scam, and I really don't get why people here like to do this.

    When someone order Ice Tea, they think oh this dude is rich guy, he has money, so they scam by fulling your glass with ice cube. Then they only pour a small part of the tea. Honest outlet will put many ice because the tea is hot, but the tea should be dense and thick, so when the ice dilutes, the tea flavor is still there.... but this one is not, the tea itself is not that hot... its plainly ice cube with tea as the dressing.

    and I end up ordering a pet bottle tea from nearby convenience store...
