    In Nigeria we have different food categories which are made from raw. For example we have cassava, we have yam, we have plantain, we have cocoyam, we have sugarcane, we have millet, we have corn or maize. And so on. So it depends on individual to know what exactly you want to use the raw food to make in terms of grinding into flour or something else to refresh your body, mind and soul. In the case of cassava it can be harvested processed washed and smash and drained then spread into the sun to get dried up as shaft then grind it again into flour mill. Also in the case of yam it is possible to have it in two ways. The first way is what you are saying in this picture whereby the yam will be harvested while not too long you plant it inside the hips or ridges.

    • After you might have noticed that it is nearly done to the second stage of maturity. You harvest it and unto the next stage which is peeling of the outer coat. When this is done fully you wash it and you slice it into different shapes then dry it under the sun for a week or more depending on how easy it's been exposed to sunlight. This is one of the best method you can also advance to oven dry method of drying the already sliced yam. But it is not advisable. You leave it to dry naturally so that the nutrients will be retained in it without any shift in the nutrient composition. I went to the market to take some pictures of how to really identify this type of Yam set already dried up for grinding into flour mill.

    Here we have different types of yam already dried up so it depends on you to choose wisely and in case you want to mix your choices together it is allowed. This is why you see a lot of people trooping into the market to buy all this type of raw food and grinding into flour. I meant so many people already in this particular shop requesting for the different type of mixture.

    • This is what is called Erura type of yam in Yoruba language because it is being sourced from another type of yam we see around. But it is very edible when dried up, grinded into flour. So you can buy a little portion of this particular dried yam and also makes it with another portion of yam then grind together.

    • This ones we have here are very much stronger than the other type you saw earlier although when you mix them and grind them together the mixture will become more excellent and it will taste absolutely delicious when it is been finally cooked.

    • This ones also is from the small portion of the original yam you all know. But it also has its own way of making it up till how it looks. You also dry it up very well to attend this shape and it's quality will be retained.

    • This particular type of dried yam may be much and differ in one state to another. I said this because there are some States here in Nigeria that are originally based in this type of Production. So they will transport it from there to any part of Nigeria even shipping to any part of the world if you want it in your country.

    • The rate at which people consume all this type of food makes it more costly although the economy as increased in prices so what can be bought in few years with a little amount of money and little portion of this right yam as triple is Prices which makes it difficult for people to get into it and buy it at the moment. Although some people who wants to resell comes here to buy in bulk and resell it.

    With a lot of questions I asked with the woman the owner of the shop, she open up to me and give me more reason why people love to eat this particular type of food stuff. The number one reason is that it's saves a lot of time even when you prepare it, within a short while it is done and prepared. And it is called Amala.

    • Some other reasons are because its does not lose it nutrients it is been harvested from the soil, peeled and washed, and also sliced into smaller pieces, then sun dried. The nature nutrients is absolutely retrained.
