I am truly grateful for all of you here especially those who gave their time reading my posts. Thank you everyone. For today's post, I would like to share our viand yesterday. It was stir fried bitter gourd or ampalaya with chicken and eggs paired with fried chicken tenders. I have shared an ampalaya dish before, but that time it was with chorizo. There are a lot of ways of preparing it, so here’s another version or option for this nutritious and delicious ingredient.
Stir Fry Bitter Gourd and Crispy Fried Chicken Tenders
INGREDIENTS:
- Bitter Gourd/Ampalaya
-Chicken Breast
-Eggs
-Tomatoes
-Onion
-Garlic
-Ground Black Pepper
-Garlic Powder
-Knorr Chicken Cube
-Salt
-Flour
-Crispy Fry
-Rebisco Cracker (for crumbs)
-Canola Oil
-Ketchup (dipping)
-Aji Ginisa Mix
-Water
PREPARATION:
Wash the chicken thoroughly. After washing, divide the chicken in half. Slice the other half into finger shapes, and the other half into small strips. Then set aside.
Wash bitter gourd and tomatoes. Peel and wash onion. Crush and peel garlic. Slice the ampalaya or bitter gourd thinly. Cut or slice tomatoes and onions thinly too. Mince the garlic. Then set aside.
Crack and beat eggs on a bowl and add just a little salt.
For the Fried Chicken Tenders
Season the chicken with garlic powder, and a small amount of ground black pepper. Coat the chicken lightly with some cornstarch and then dip the chicken tender into the beaten egg. Then coat some rebisco crumbs. (I don't have any available bread crumbs this time so I just used crackers instead.)
COOKING TIME:
Heat a small amount of canola oil in a pan. Then pour in the beaten eggs. Stir the eggs in circular motion with a chopstick until it is cooked. Remove from the pan and set aside.
In the same pan, add some canola oil and heat the oil on low to medium heat. Then fry the chicken tenders until they are all cooked. Remove and transfer the cooked chicken to a plate with a paper towel to remove the excess oil.
Heat some canola oil in a pan again. Sautee garlic, onions, and tomatoes.
Add the chicken and continue cooking by stirring. Then add Knorr chicken cube. Continue cooking for about 5 to 8 minutes.
Then add the bitter gourd or ampalaya. Stir to mix and combine all the ingredients. Season a little amount of ground black pepper and 1/2 teaspoon of Aji Ginisa mix powder. Then add 1/2 cup hot water. (I'm sorry I forgot to take a picture of the ginisa mix)
Cover and continue cooking until the bitter gourd is already cooked. Then add the fried scrambled eggs. Stir and combine nicely.
