Today, I am here to share with you how to prepare a delicious and nutritious curry made with Thai eggplant and jackfruit seeds.     Required Ingredients...

    🍀 Thai eggplant 75g.
    🍀 20 jackfruit seeds.
    🍀 A little chopped onion.
    🍀 Some curry leaves.
    🍀 A little bit of finely chopped garlic.
    🍀 A few chopped green chillies.
    🍀 A thinly sliced ​​tomato.
    🍀 1/3 teaspoon of Fenugreek seeds.
    🍀 1/2 teaspoon of turmeric powder.
    🍀 1 teaspoons of curry powder.
    🍀 1/2 teaspoon of pepper.
    🍀 Salt as needed.
    🍀 1 teaspoons of chili powder.
    🍀 1 1/2 tablespoon of coconut oil.
    🍀 1 cup of coconut milk.
    🍀 1 cup of Low density coconut milk.

    Method of making....

    First, wash and clean the Thai eggplant. Then, remove the skin from the jackfruit seeds, cut them into small pieces, and wash them. Place both the eggplant and jackfruit seeds into a cooking pot.

    Then finely chop onions, tomatoes, green chillies and garlic.

    Then add the eggplant and jackfruit seeds to the pot, add pepper powder, chili powder, curry powder, turmeric powder, cinnamon and stir well.

    Next, take a pan and place it on the stove. Add about 1 1/2 tablespoons of coconut oil. Once the oil heats up, add fenugreek seeds, chopped garlic, onion, curry leaves, and tomatoes. Fry for about 2 minutes.

    Then, add the mixed Thai eggplant and jackfruit to the pan. Mix well. Pour in a cup of thin coconut milk and cook for about 5 minutes.

    Then, add a cup of condensed coconut milk to the curry that has been cooking for about 5 minutes. Cook for another 4 minutes, then remove from the heat.
