Egg spring roll for our breakfast

    Happy weekends everyone. After cooking rice for our breakfast and lunch I was thinking what food to prepare. We have vegetables for ginataang gulay or vegetables with coconut milk but since I don't feel cooking that recipe for breakfast I was thinking for another recipe. We have eggs and that's the very common food for breakfast.
    Since we have spring roll wrapper from the last time I made vegetable spring roll I decided to make a egg spring for a change.

    Scrambled egg

    First I cook 4 scrambled eggs.I only added a little spring onion to add color on it,a bit of salt and seasoning mix.

    Then we wrap it with the spring roll wrapper and then cook it after.
    I know we can make any kind of lumpia but it was my first time to make an egg spring roll.

    We only made around 13 pieces since that's the only available wrapper

    The taste was okay. It taste like egg mix with the crunchiness of the lumpia wrapper. Next time I will make another lumpia recipe.Might be a ham,cheese or hotdog.But of course vegetable lumpia is our all time favorite.
    What I notice when I was frying the egg lumpia is it slowly expand and leave a cracks on the wrapper. I guess its because my scrambled egg was not really well cook so when I fry the egg lumpia it makes the egg expand more.
