I found this Costco Copycat Chicken Bake and thought it would be something different to have for dinner. Basically, it is a stromboli with a twist and I know you will enjoy it.
I had a couple large chicken breasts on hand, this recipe was a perfect way to use them up.
Recipe
1 1/2 lb pizza dough
2 cup chicken, cooked and shredded
1 cup bacon crisps
3 cup mozzarella cheese
1/2 cup parmesan cheese (optional)
1/2 cup diced peppers
sliced, cooked mushrooms (optional)
1 cup ranch dressing or homemade
flour
Pizza Dough
¾ cup warm water
1½ teaspoons sugar
1 (¼-ounce) package active dry yeast
2 cups all-purpose flour
1 teaspoon sea salt
1 tablespoon plus 1 teaspoon extra-virgin olive oil
- Note: I doubled the dough recipe as I wanted leftovers for lunch later that week. It just needed to be reheated for a few minutes and it was just as delicious as if I had just made it.
Ranch Dressing
1 to 2 cloves garlic, minced
Salt, to taste
1/4 c. Italian flat-leaf parsley, finely chopped
2 Tbsp. fresh chives
1 c. (real) mayonnaise
1/2 c. sour cream
1/2 tsp. Worcestershire sauce
1/8 tsp. cayenne pepper
1/4 tsp. paprika
Fresh dill finely chopped
Buttermilk or milk, as needed for desired consistency
Make the ranch dressing and then prepare your pizza dough. Lightly flour your counter and roll the dough out into a long rectangle.
Spread the ranch dressing on top of the dough leaving a 1" border on all sides.
Top with the shredded chicken, bacon, mushrooms, and mozzarella cheese.
It's time to roll it up and place it onto an oiled baking pan. Cover it with a towel and let it rise for 1 hour.
You can see from the illustration that the dough will practically double.
Once the chicken roll has rested and risen, brush some of the remaining ranch dressing on top of the roll and sprinkle it with parmesan cheese.
Bake the chicken roll at 425°F. approximately 35 minutes or until it is golden brown and cooked through.
I admit that my husband said I could repeat this recipe anytime. I think he says that about everything I make, well almost! :-)
Adding a salad as a side dish was the perfect pairing for this copycat Costco Chicken Bake. I certainly will make this again but next time I may use shredded pork instead. Just saying.
