Coconut Veggie Rice with Beetroot

    Hi everyone, how are you all doing? Hope we all had a wonderful weekend. Being a vegan is a beautiful thing because it helps you maintain a healthy living. Even though sometimes, we might have the urge to taste other non-vegan foods but trust me, vegan life is the best.

    So today I will like you to join me in the step-by- step process of making coconut veggies rice, garnished with beetroot.

    Coconut is rich in antioxidants, has very strong antibacterial properties, helps digestion, enhances the skin amongst other things. So coconut is very healthy.

    Ingredients;
    1kg rice
    1 coconut
    5 sticks of carrots
    Spring onions
    1 onion
    2 Green bell pepper 🫑
    4 Yellow habanero peppers
    2 table spoon Soy sauce
    25mils Soy oil
    Turmeric powder
    Tea spoon salt
    Green peas
    Sweet corn

    Procedures;

    Wash the rice into a pot and bring to boil for 5 minutes, then pour in a sieve to get rid of excess water. This is a way to parboil your rice, and its a good procedure because it helps you get rid of excess starch as well.

    Slice your coconut into a blender while waiting for the rice water to be totally drained, add some water and blend smooth.

    Then sieve out the coconut milk

    The next step is to put a dry pot on fire and pour your soy oil. Pour half of your sliced veggies in the hot oil and fry a little.

    Then pour the coconut water, add 2 tablespoon soy sauce and turmeric powder, cover the pot and bring to boil for 2 minutes.

    Pour the parboiled rice into the boiling sauce

    Then pour the remaining fresh veggies on the rice, add a lil salt for taste. Cover the pot and allow to cook.

    While waiting for the rice to be cooked and ready for consumption, here's our beetroot .
    Beetroots helps reduces heart disease, stroke, blood pressure and helps digestion amongst other things.


    Wash and slice to desired shapes. You can now serve with you delicious coconut rice.
