The Christmas season brings an abundance of food, especially for those who have the means to purchase a wide variety of dishes for their holiday celebrations. I've been doing intermittent fasting for almost two months now, but I still try to eat healthy and balanced meals whenever I eat.
I recently discovered a new recipe for a simple vegetable dish that I'd like to share. I'm always trying to find ways to get my family to enjoy eggplant, so I've been experimenting with different ways to cook it. This recipe is a tasty alternative to the usual eggplant omelet (Tortang Talong) that we typically make.
INGREDIENTS
2 Eggplant
1 egg
1 tablespoon All purpose flour
1 onion
Oil
Salt and pepper
Procedure
Dice the eggplant
Dice the onion and add it to the dice eggplant
Incorporate the all purpose flour.
Whisk the egg and then add it to the other ingredients.
Season with salt and pepper, then combine thoroughly.
Scoop a sufficient amount with a serving spoon and pour it into the hot oil.
Turn the mixture over when it becomes golden brown.
Serve it while it's hot. It is perfect if you deep it with vinegar with onions on it.
