Sometimes, to spice up a normal and regular dish requires very little ingredients, just the addition of different colorful veggies and the right combination of spice.
This added veggies don't just make the dish attractive but also very healthy to the body, i added one ripe fried plantain to elevate the taste.
I love ripe plantains especially when fried.
Aside the beauty it portrays, it is very tasty . I assure you.
I added a very nice natural spice that i purchase from a particular woman in the market.
I wish i would get that spice recipes and make it here on hive some day.
Here is a detailed process of how i prepared my yumm colorful and flavourful brownie rice.
- 2 cups of rice
- 1cup of groundnutoil
- 1 tablespoon of brownie
- 1 tablespoon of salt
- 1 tablespoon of mixed natural spice
- 1 ripe plantain
- 1 red bell pepper
- 1 big green bell pepper
- 4 pieces of carrot
- 1 medizm sized onions
- a handful of fresh red pepper
- enough water for cooking
Wash and parboil the rice
Before parboiled my rice , i love washing the rice with cold water first, then transfer to my clean pot and parboil for 5bminutes.
After parboiling, i washed it again and transferred to a sieve.

Cook the rice till 90% ready and add some ingredients
I transferred the rice to my cooking pot and add enough water to cook till 90%ready, then i add my salt, the natural spice that i bought from the market, a tablespoon of brownie and allowed it to boil till 90% done.
Slice the veggies and ripe plantains
Wash the ripe plantain, remove the peel and slice into cubae shapes, wash the veggies (red bell pepper, green bell pepper , carrots).
Remove the seeds of the bell peppers and slice to your desired shapes, do the same to the carrots.
I washed the fresh pepper, and separate the yellow from the red ones, i sliced the yellow one and pound the red ones.
Then i sliced my onions and set aside.

Fry the veggies
When the rice was almost ready, i removed the rice from heat.
I placed a clean pot on fire and add my groundnutoil, onions, carrots and stir.
I added the two bell peppers, fresh pepper and continue stirring.

Add the rice
Add the rice to the fried veggies and stir together , at this point i added more oil so it will look more attractive to the eyes.
Fry the cubed plantain and add
Fry the cubed plantain to golden brown and add to the cooked rice.
Stir a little and lower the heat.
At this point the aroma of the food has fill the entire house .
The combination of different aromatic flavors has filled the entire house, making everyone hungry ☺.
Remove from heat and serve.
This dish was enough for 4 people.
The dish was so delicious that everyone loves and wanted more.
I in particular loved the combination of different veggies which made it healthy to consume.
The added brownie gave it the perfect color, even without adding fresh tomatoes.
