First Time Making Rawon Chayote and Bean Sprouts

    A dish like black-colored soup always intrigues me, this dish is usually non-vegan and made from processed meat. So what if today this dish is made with a simple combination of vegetables at home.

    Vegan Rawon

    I'm not sure if this looks like the original, because rawon is usually made from meat or meat bones. It is then cooked like a soup with the addition of petis, which is rarely found in my city. Rawon is a traditional food from Yogyakarta. In addition, the main ingredient in making rawon is kluwek because rawon is synonymous with its black color which makes it savory and fresh. As a new person who first tried rawon, I was very curious, how the sauce could be black and taste savory and fresh, so I often looked it up on the internet. Now kluwek itself is very rare in my area, incidentally yesterday I went to the city and shopped for spices so I found this fruit. I thought I would try making a delicious vegan rawon at home.

    The vegan rawon that I made was based on simple vegetables, namely bean sprouts and chayote. Cooked like a soup with simple spices, of course, the addition of chili peppers as a spicy flavor enhancer for perfect freshness. The main thing is kluwek as a natural dye and increase the savory taste. So here's the step by step preparation.




    Materials Used


    Main Ingredients

    200 grams chayote
    50 grams bean sprouts
    2 stalks spring onion
    1 lemongrass stick
    2 lime leaves

    Ground spices

    3 red chili peppers
    2 keluak grains
    4 cloves shallots
    2 cloves of garlic
    1 hazelnut
    5 pieces of cayenne pepper




    Rawon is identically made using keluak (Pangium edule) fruit or often known as kluwek, this fruit itself comes from the kepayang tree which was originally a wild plant. But now this plant is widely cultivated because kluwek seeds themselves become one of the spices for rawon ingredients or as other spices that have a savory taste.

    The color is dark and the aroma is like the aroma of chocolate, now because the aroma is dark brownish black, kluwek is a basic spice in creating black color in traditional dishes in one of the regions in Indonesia.




    Cooking Procedure


    Step 1


    Peel the rough skin of the chayote, be careful the chayote has gummy skin if you have allergies it would be nice to use gloves well after peeling wash it thoroughly.

    Step 2


    Then split into several parts and seed the center of the pumpkin, then cut into small sizes according to your taste.

    Step 3


    Don't forget to chop the other ingredients as well, such as finely chopped lime leaves and spring onions.

    Step 4


    Puree the spices that have been prepared above, then heat the pan with a spoon of cooking oil and stir-fry the spices.

    Step 5


    Let the spice cook until it boils then add the lemongrass that you have pressed.

    Step 6


    Next add 1 liter of water and wait until it boils, if it boils add chayote and bean sprouts.

    Step 7


    Then add the spring onions and lime leaves stir everything until well mixed.

    Step 8


    Cook again until the vegetables are cooked, don't forget to add seasoning in the form of salt and also mushroom broth.

    Vegan rawon with a delicious mix of vegetables is ready to be served, now if you like you can add other vegetable proteins. You can also add tofu or tempeh in this dish, I'm sure the dish will be very complete. But in my country rawon is enjoyed with warm white rice, uhh sipping savory rawon then take a spoonful of rice guarantee it will taste very good.

    It was very savory, a little spicy with a fresh taste, really authentic, the combination of vegetables was very fitting, maybe next time I will add mushrooms as a substitute for meat in rawon I'm sure it will taste even better. The aroma is very distinctive, I like to smell it when cooking alone was already spoiled with the aroma especially when served like this.
