It’s a special time for Plant Power (Vegan) as we celebrate three years of promoting plant-based living here on Hive. I couldn’t be more thrilled to contribute to this milestone by baking a vegan cake that embodies the simplicity and deliciousness of plant-based ingredients.
When I think of celebration, a cake is the first thing that comes to mind. And fittingly the vegan community has created this nice initiative of baking a cake for the purpose of the celebration. For this occasion, I wanted to create a cake that is not only delicious but also easy to make using common vegan ingredients.
I carefully got all the ingredients making sure they are all vegan. I used a combination of coconut milk and cinnamon which gives the cake a rich, warm flavor, making it perfect for celebrating this momentous occasion.
Below are the full list of ingredients I used to create the cake:
The Ingredients
Ingredients:
- 2 cups all-purpose flour
- 1 medium sized coconut
- 1 cup sugar
- 1 cooking spoon vegan butter
- 2 tsp liquid vanilla
- 1 tsp cinnamon powder
- ½ tsp baking soda
- A pinch of salt
- 3/4 cup water

Procedure for making the cake
- First step I did was to add sugar to the butter and whip to make it light and fluffy.
- Next I cut the coconut open and grate it to get the milk from it
Next I got a bowl, there I combine the flour, sugar, cinnamon, baking soda, and salt.
In a separate bowl, I mix the coconut milk, vegan butter, vanilla, and water.
I Gradually added the wet ingredients to the dry mixture, stirring gently to avoid overmixing.
- Next I got a pan, greased it with butter, added flour to stock to it, poured out excess flour. Then I Pour the batter into the prepared cake pan.
- Using the local constructed oven. I was able to Bake it for like 30 minutes
Preparation for coating
- 250g Icing sugar
- 1/2 cooking spoon Vegan butter
- 1 tablespoon green color
For the coating I gently mix the Vegan butter to the icing sugar, with the green color to form a paste. Then coated the cake and wrote the word "Plant power vegan" on it .
This vegan cake turned out to be everything I hoped for—moist, flavorful, and the perfect way to celebrate Plant Power’s anniversary.
As a bonus for this special occasion, I also got papaya fruit to make things more colorful and delicious, I had fun cutting it in different shapes.
So I had my cake and my fruit, I wanted th arrangement to look really beautiful so I made decided to make a letter work by recycling some waste products and cutting letters out of it. I carved out the word: "Happy anniversary Vegan" and decorated it
I had the cake cut to celebrate. Being part of plant power (Vegan) has changed my life. I've learned so much about healthy living so I'm grateful for this opportunity to celebrate it
