Pancakes Baked in the Oven

    A new dish from my kitchen! You can make it if you like.
    Whether prepared with or without a meat filling, this dish is very rich and high in calories.
    It's also not complicated to prepare. You can fill the pancakes with cheese, ham, salami, spinach, chard, whatever you have in the fridge.
    Of course, you have to bake the pancakes first.

    I didn't bake the pancakes, as I had never made them before, nor did I make bread, but everything would come slowly. I have plenty of time now. πŸ˜‚

    My wife made the pancakes - she's a master at it.
    My sons immediately ate some of them with Nutella, and I baked the rest in the oven for lunch the next day.

    To make, say, 15 pancakes, you will need

    • 250 grams of flour
    • half a liter of milk (we add 400 ml of milk and 100 ml of mineral water to make them fluffier)
    • two eggs
    • a teaspoon of salt
    • a teaspoon of sugar (for sweeter pancakes, you can add two teaspoons)
    • 2 spoons of oil or butter for the batter + another spoon for baking

    That was yesterday.
    Today, it's my turn. I'm going to stuff and bake the pancakes in the oven.

    • 10 pancakes
    • cheese from the fridge (mozzarella, cheddar, gouda)
    • parmesan (Grana Padano)
    • bacon
    • ham
    • two eggs
    • cooking cream

    Since I still had bacon, I wrapped the pancakes in bacon.
    It's a bit of an exaggeration, but it's a real meat and protein bomb. Now it's Carnival time here, or the start of masquerades and carnival parties, when such strong food is eaten. So-called "Fat Thursday" is the first day.

    It's not finished yet.
    Now comes the dressing of whatever is left. Mix the two eggs, grate the cheeses, add the cooking cream, and mix well.

    Place the pancakes in the pan where they will be baked and pour the topping over them.

    Before putting them in the oven, add salt and pepper to taste and sprinkle with grated Parmesan cheese to give them a crispy crust.

    The oven is preheated to 200 degrees and the pancakes are baked for 20-30 minutes to brown and crisp up the crust.

    Now, we need to serve.
    Typically, something sour is included as a side dish, I add a mixed green salad with rucola and beans.

    I planned to prepare enough food for two days, I hope, because I won't cook tomorrow.
