    Pineapple is commonly enjoyed as a fruit, but today, I have transformed it into a delicious dish. Pineapple curry is a unique and flavorful preparation that perfectly balances sweetness, tanginess, and spice. It is one of the most beloved dishes in Sri Lankan cuisine, where ripe pineapple is cooked with aromatic spices, creamy coconut milk, and a hint of chili, creating a mouthwatering combination. This dish pairs wonderfully with both rice and bread, making it a delightful addition to any meal. It is also incredibly easy to prepare.     Materials Used.

    A ripe pineapple.
    Salt as needed.
    2 Tablespoon of coconut oil.
    1/2 Cup of coconut oil.
    1 Teaspoon of roasted mustard seed.
    1 Teaspoon of sugar.
    1 Tablespoon of curry powder.
    1/2 Teaspoon of turmeric powder.
    A Piece of cinnamon.
    2 to 3 cloves.
    Some Fenugreek.
    Curry leaves.
    A finely chopped onion.
    Two pinches of crushed garlic.
    1 1/2 Teaspoon of Roasted Chilli Powder.
    2 Teaspoon of Roasted curry powder.

    The cooking process as follows.

    First, take a moderately ripe pineapple, remove the outer skin, and clean it thoroughly. Then, cut it into small pieces.

    Next, take a clay pot and place it on the stove. Add about two tablespoons of coconut oil. Once the oil is heated, add mustard seeds, cinnamon, cardamom, curry leaves, onion and garlic. Sauté for about a minute until fragrant.

    Next, add salt, turmeric powder, roasted chili powder, and curry powder to the pot. Sauté everything for about two minutes until the spices are well combined and aromatic.

    Next, add the chopped pineapple pieces and mix well. Then, pour in the coconut milk and stir to combine. After a minute, add a teaspoon of sugar and the roasted mustard seeds. Cook for about three more minutes, allowing the flavors to blend, and then remove from heat.
