Among all of the noodle dishes that I tried, this one is probably the most bizarre, it’s the Minced Meat Noodles with Shredded Cucumber.
I ordered this from Liang Xing and it’s the most affordable item in their menu. The price made me curious and wonder is it really a good deal or not.
It has 3 main ingredients, the handmade noodles, sautéed minced pork, and the shredded cucumbers. The sauce is made up of a mixture of soy sauce and garlic-chili paste.
Among all of the ingredients, the shredded cucumbers is the one that threw me off at first. I sample the taste and it’s plain cucumbers only. My doubts arose and I didn’t know what to do with it so I simply mux everything together.
After mixing it thoroughly, I gave it a try and I was amazed by the flavor combination. I never thought that cucumbers will taste great together with savory dishes. This felt like a revelation because I have never tried something like this before.
Another good aspect of adding freshly shredded cucumbers is that it adds crunch to the mix of noodles. This interesting texture combination has added and extra level of fun to the dish.
I will definitely come back to try this dish again soon!
Noodle dishes is one of my favorite to eat especially during dinner time. It's not as heavy as rice meals and it's also fun to eat. The texture of handmade noodles is much better than the factory made ones because it's more flexible and springy. It's the texture of the noodles that made me always return to Liang Xing for good food at an affordable price.
