Carrot cookies? Why not!
I've found a grest recipe of healthy cookies that need just 10 min of our time.
I call them "dry" because we don't use any liquid there - neither water, nor milk or juice.
Where is the secret?
We need:
- 250 g of carrots
- 350 g of whole-wheat flour
- 80 g og coconut oil
- any sugar substitute you use
- cinnamon or vanilla
- some baking powder
We just mix them all and create cookies.
I doubted the dough will be good because no liquid is used, but it was Ok thanks to oil and carrot juice.
So my son and I formed cookies and baked them about 15 min.
Cookies are really tasty and not dry! Oil was good;)
We made them yesterday but today they are still soft and tasty;)
