Cooking creamy broccoli carrots and meatballs pasta!

    I was tired to go out to pack food today, and the boys said they wanted pasta! So happen I had all the ingredients needed, so it was easy peasy, let's cook!

    Broccoli creamy pasta with meatballs

    I wanted to try to avoid using the pre-made canned pasta sauce today because I had already cooked a pot of creamy canned chicken mushroom soup. Therefore, this round, I was trying a more soupy pasta but still creamy, so I just told them it would be pasta with broccoli creamy soup. They said "Anything is alright as long as it is pasta!"

    Ingredients

    Husband bought frozen meatballs, so let's put it to good use. According to instructions, there are few ways to cook it, I chose the simplest way which was by steaming.

    For the vegetables side, I used big onions, garlic, carrots and broccoli. Just diced them up.

    Let's cook!

    In a pan, heated up some unsalted butter, followed by adding in the garlic and onion, sautéed till aromatic.

    The little one said it smelled so fragrant that he wanted to be part of the cooking. Haha. So, I let him tried the sauteeing part.

    After the onions and garlic had soften, moved on to adding the carrots and mixed them up.

    After stir frying for about 3 minutes, I added in water for the sauce or soup base, following by seasoning such as salt, pepper, chicken stock powder and mushroom stock powder. Let the whole thing simmered for about 5 minutes.

    And then, the broccoli would be added in, let it simmered till soften. It took about 3-5 minutes.

    I then added in cooking cream because it would make the whole soup so creamy and tasted so delicious.

    Just look at the creaminess!

    ***I had already cooked the spaghetti earlier, just scooped the amount of pasta we wanted, added in the broccoli carrot creamy soup and followed by some meatballs at the side. We love simple affordable dish like this!
