Classic Soup That's Easy To Make From Enoki Mushrooms

    Hi vegan lovers, happy activities to all of you, I am very happy that today I am giving you one of the newest vegan-based recipes for you to make at home. Today I want to process mushrooms, and take part in the Hive Top Chef contest held by the @qurator team. It's simple and easy to make using one simple ingredient namely enoki mushrooms, as well as several other supporting materials.



    Enoki mushrooms are a favorite mushroom in several Asian countries, these mushrooms have a unique shape and very delicious taste. If previously I had made various vegan recipes from enoki mushrooms, this time I will provide inspiration for dishes from these mushrooms. Simple but very delicious to enjoy when gathering with family.




    Classic Enoki Mushroom Soup

    Why do I call it classic soup? This is because the soup is made from simple spices, which my grandmother often made when I was little, only we formerly didn't use enoki mushrooms. At that time, this fungus didn't seem to exist in my area.

    This soup is very delicious even though it doesn't look festive in the bowl, but when I sipped the soup for the first time when it was made by my older sister, I was very surprised that the soup reminded me of my past. I immediately asked what ingredients were put into the soup so that it was very similar to my grandmother's soup. Because my older sister lives with my grandmother, she really understands my grandmother's cooking, so it's not a big problem to make her grandmother recipe at her dining table. So, instead of being curious, let's look at the recipe.




    Ingredients

    1 pack of enoki mushrooms
    1 carrot
    1 potato
    1 spring onion
    1 bay leaf
    2 cm cinnamon
    1 cardamom grain
    1 star anise flower
    1 teaspoon ground pepper



    Ground Spices


    2 Spring onions
    1 clove of garlic
    1 candlenut

    Cooking Procedure


    Step 1


    Prepare all the ingredients, then take the enoki mushrooms, cut the roots and wash them until clean.

    Step 2


    Cut the carrots into small cubes then soak them in water so that the carrots don't turn black quickly.

    Step 3


    Continue cutting and store them a little larger in a container of water too.

    Cut the leeks into small pieces, and all the ingredients are ready to cook.

    Step 5


    Blend the spices using a little water. Saute the spices with 1 tablespoon of cooking oil.

    Add enough water here I use 500 ml of water.

    Add the cinnamon, cardamom, star anise and bay leaves.

    Wait for the soup to heat up, then add the chopped carrots.

    Season with salt and ground pepper, stir until evenly mixed and adjust the taste.

    Then after boiling, add the potato pieces and enoki mushrooms.

    Stir everything until evenly mixed, cook and add the spring onions and cook until boiling and completely cooked.

    Serving Suggestions

    Serve the soup in serving bowls then add fresh tomato pieces to create a spectacular taste, I also added a little lime juice to enjoy. So here I am eating soup with one portion of rice, you need to know that I managed to make this soup for two portions. And of course it tastes similar to my grandmother's old recipe. Even though my grandmother used mushrooms picked directly from her garden, the taste is still the same. My mother was happy, she said it was her first time eating enoki mushroom soup and it was very similar to grandma's recipe. Maybe because of the strong spices, the orange taste makes us reminisce about our childhood with this soups.

    It's so yummy to enjoy a classic soup that has been dreamed of in our house for a long time.
