Making spicy papaya stir fry from my garden

    This month is the month where I feel like I have a big harvest, especially my papaya trees which are all bearing fruit and almost ripe. Of the many papaya trees I have, there are some that bear sweet fruit because I bought the seeds specifically for the fruit to eat, while there are also papaya trees that grow because of the seeds from the old papaya fruit that we eat and these seeds that grow themselves are the ones that bear fruit. but the fruit is not so sweet so my husband and I don't like to consume it just like that, I have to process this papaya first into juice, smoothies, pudding and many other types of desserts but now I will not process my papaya into a dessert but will I made vegetables to accompany the rice and I'm sure it's quite delicious, but it all comes down to individual taste.



    Because I will process this papaya into something spicy, the ingredients I use are definitely different from the ingredients for dessert dishes which tend to have a sweet taste.

    The ingredients I used in this recipe are:

    1. Papaya (the papaya I use in this recipe is a young papaya that is a little old or half ripe papaya and I use 2 small papayas for this recipe, but you can also make it with just half a papaya, or just one papaya What is clear about the success of this recipe is that you don't use ripe papaya, because it can't be grated and it tastes too sweet. If you only have raw papaya, that's not a problem.)

    2. Shallots (the amount of shallots used depends on your taste, you can use 4-5 cloves of shallots according to the size of the shallots you have)

    3. Garlic (in this recipe I use 2 cloves of garlic)
    4. Tomatoes (the tomatoes I use are small so I use 1 tomato, but if the tomatoes you have are large then just use ½)
    5. Salt (use ½ tablespoon of fine salt, but adjust again to your taste)
    6. Red chilies (here I use red chilies as a fine ingredient and I add small tick chilies to make the taste even spicier and in this recipe I use 4 small chilies)

    7. Green chilies (in this recipe I use mountain green chilies which have a spicier taste and I use 8-10 green chilies)



    How to make :


    1. I washed the papaya fruit that I had peeled and cut it into several parts, then I removed the seeds

    2. After I removed the seeds, I grated them using a coarse grater until the results can be seen in the picture.

    3. After that, puree the shallots, garlic and red chilies, you can use whatever tools you have to puree them and I prefer to use a blender so it's much smoother

    4. After the spices are ground, I sauté them, stirring until the spices are fragrant

    5. While waiting for the fragrant spices, I cut the green chilies lengthwise.

    6. Once the spices are fragrant, add the green chilies, then stir in the salt. Stir briefly then add the grated papaya.

    7. Stir until all the spices are evenly mixed, add a little water and let it cook for about 5 minutes. After a few minutes, check and adjust the taste to see whether it suits your taste or not. If the papaya is soft according to your version, then turn off the heat and stir-fry the young papaya and you can enjoy it.
