Hi all hivers friends. Today I want to share one of the recipes for side dishes that you might try to make for your daily menu at home. This is the main menu for our cooking ingredients today, namely anchovies. Do you know what anchovies are? Anchovies are processed marine products in the form of anchovy seeds that are used as side dishes in main dishes or as snacks. There are two types of processed anchovies, the first is wet anchovies and dry anchovies. In my area, wet anchovies are very rare.
Today I want to cook dry anchovies. But did you know that dry anchovies are also rare, especially in my village, because the selling price is already very high, making people think twice about buying them, therefore, sellers also rarely provide this anchovy ingredient. Well, it just so happened that yesterday I went to the market and saw dry anchovies, so I immediately bought them because I hadn't eaten them for a long time. Even though when I was little, my mother often cooked this anchovy because the price was probably still very affordable.
I also combine this anchovy with some other ingredients such as tempeh and peanuts. I think this is a very suitable ingredient to combine. Okay, let's start by preparing the ingredients first.
Ingredients needed:
- 100 grams of dried anchovies
- 1 medium-sized tempeh
- 100 grams of peanuts
- 20 red chilies
- 7 cloves of shallots
- 2 cloves of garlic
- 2 tomatoes
- 1/2 tsp granulated sugar
How to make:
First: cut the tempeh into small sizes or according to taste. Set aside. Wash all ingredients thoroughly
Second: heat the oil, use low heat only. Fry the tempeh until golden brown or until cooked. Next, fry the peanuts while stirring so that the peanuts do not burn easily and cook evenly. Remove. After that, fry the anchovies while continuing to stir so that they cook evenly until cooked. Remove and set aside
Third: prepare the spices for the sambalado. Peel the shallots and garlic. Wash the red chilies and tomatoes thoroughly. Cut into small pieces so that it is easy to puree. Put it in a blender and puree.
Fourth: heat the oil. Add the ground spices. Add granulated sugar. Cook until cooked. Do not add salt because anchovies taste salty. When the sambalado is cooked, mix all the ingredients, namely anchovies, peanuts and tempeh. Stir until well blended. Ready to serve..
Tip: if you want the sambalado to be more fragrant, saute the shallots first until fragrant before adding the sambalado seasoning, my friends. And you can also add chopped celery leaves.
Let's serve it to your family at home
The slightly salty, savory and crunchy taste of anchovies and also the sweet, spicy taste of sambalado make it special for your rice side dish. This side dish menu is very delicious to eat with warm rice even though it is not accompanied by other menus. That's why this menu with anchovies has been my favorite from childhood until now and is also a favorite of many people regardless of its fantastic price equivalent to the price of 1 kg of meat.
A very suitable combination of ingredients, makes me eat heartily, very delicious.
