Yesterday I saw in the back garden, there were butterfly pea flowers left on the tree that fell when the damage to my garden started. I didn't expect the flower to grow again in abundance. Because I wanted to process it, I started picking some of the flower buds. The tree isn't that big anymore but for the cake I made it would definitely be enough. I will process the noodles into delicious snacks that you have never seen before.
Corn Vermicelli Coconut Cake
This cake is a delicious snack, a combination of corn vermicelli and grated coconut. Interestingly, corn vermicelli is given its natural color from soaking in telang flower water. You should know that butterfly pea flowers are flowers with a million benefits. So, for those of you who use this flower as a natural dye, it will be very good for your health.

Ingredients
30 butterfly pea flowers
3 tablespoons granulated sugar
100 grams of grated coconut
½ teaspoon salt
3 spoons of tapioca flour
¼ teaspoon vanilla powder
200 ml water
Creation Procedure
Wash the butterfly pea flowers, then boil them in water until they color and boil.

Prepare the vermicelli, cut the vermicelli into several pieces, well here I don't cut it too small but if you like you can do it. Now, after the water has boiled, strain it into the vermicelli pieces.

Soak for approximately 5 minutes or until the vermicelli softens.

While waiting for the vermicelli to soak, let's prepare the grated coconut. Add salt to the grated coconut then add granulated sugar too.
Stir until evenly mixed, check the taste, if it's just right it means the coconut is ready to use. So here are a few tips to make the cake tastier, use fresh coconut so it tastes more delicious and fresh.
Prepare the molds, grease all the molds with cooking oil until it is evenly distributed over the entire surface of the mold. Then add a spoonful of grated coconut, so when you add it, press it so that the coconut is solid. Do it until it's finished and set it aside for a while.
So, after 5 minutes, I checked the vermicelli again and it was ready to be used. Strain the vermicelli from the soaking water. Just look at the color changing to be very beautiful.

Next, season the vermicelli with sugar, then add salt and vanilla powder.

Stir until evenly mixed, then add tapioca flour, stir until evenly mixed and the vermicelli mixture is ready to use.
Add the vermicelli mixture into the coconut mold, do this until finished, then steam for approximately 20 minutes.
Results
Wait for the cake to warm for a moment, then remove it from the mold, now the telang flower vermicelli with a combination of coconut is ready to be served. Serving it while warm will be very delicious with your cup of tea or coffee.
The taste is sweet, sticky with a delicious aroma, plus the color is very beautiful, the original color of the telang flower is very beautiful combined with the natural whiteness of grated coconut. The savory taste of grated coconut is very tempting, especially since the chewy texture of the corn vermicelli is enough to give this dish an extraordinary sensation.
