Hi friends, HIVE is back with me again and this time I bring a new recipe and it's still a home recipe whose process is very simple and this time I made my afternoon snack recipe from cassava that I bought at the market this morning. And I made this snack for the afternoon while looking at my small garden. And to make these fritters, the ingredients and process are very easy, you can see them below, don't skip it, friends.

    Materials I need:

    1. Cassava approximately 500 grams

    2. Green onions to taste (you can use celery leaves or green onions, but because there are no supplies of these leaves, I use these green onions which are found behind my house.)

    3. 1 teaspoon of salt (but not the full measure)

    4. ½ teaspoon black pepper

    5. ½ teaspoon coriander.

    6. 2 cloves of red onion

    7. 1- 2 cloves of garlic

And in the process of making cassava fritters, the most complicated thing or what makes me lazy is softening the cassava that I have boiled because the texture of cassava is a little sticky, unlike potatoes and because the texture is sticky when mashed, so when I mash it it becomes heavy and this is like exercise for me... ha..ha.. and let's make the cassava fritters.

The steps for making my version of cassava fritters are

    1. Peel the cassava first, then wash it until clean and make sure you choose good quality cassava so that when you boil it, the cassava becomes soft easily. After cleaning the cassava, boil it for approximately 15 minutes.

    2. After I confirmed with a fork that the cassava was cooked, I drained it and let it cool for about 10 minutes. After the cassava cooled down a bit, I crushed it with a glass because I didn't have another crushing tool.

    3. Once smooth, I added salt, coriander and black pepper at the same time

    4. Then don't forget to crush the shallots and garlic using a mortar. Once they are smooth, then I add them to the cassava which I have also crushed.

    5. And the last ingredient I added was green onions which I previously sliced first, and I used a little more of these green onions so that my cakes had a pattern.

    6. After I have mixed all the ingredients into the cassava that I have mashed earlier, the next step is to spread all the ingredients evenly using my hands which I have previously washed and smeared them with a little vegetable oil so that my hands don't get sticky. If you have plastic or silicon gloves, please use them, but if you don't have them at home then use my method.

    7. After all the ingredients were mixed well, I rounded it and flattened it, the shape wasn't all the same because I only made it with my instincts, not using a mold and the result was as seen in the picture.

    8. After all the dough is finished, I roll it out and then heat the vegetable oil, not too much. Once it's hot, I add my cassava fritters. And don't set the fire too high, medium heat tends to be small because we boiled the cassava already, so the frying process is only to make the surface of the cakes crispy and the inside is still soft, but all the spices are perfectly cooked.

    9. Once the cassava cakes look brown, remove and drain.

    10. I can eat the cassava fritters and what's really challenging is when I eat them hot... ha..ha.

That's the recipe for these cassava fritters that I made, you have to try it. Greetings from Tomidiwirja Indonesia.
