Beet is a very popular vegetable in my place. It's used mainly for cooking "borsch" - a traditioinal first dish or for different veggie salads.
In this recipe beet is a part of unususal sweet salad, so even kids who don't eat beet will like this salad.
my son isn't a great beet lover either (though he adores borsch, what a weird thing;). he can eat fresh beet in salads, but cooked one isn't for his taste. But again - in this sweet salad it tastes really cool.
We need:
- beet
- nuts
- apples
- lemon juice
The longest preparation here is cooking of beet that requires more than 1 hour...
All the rest is super fast - just grind ingredients or cut them into small pieces.
I don't use any oil here because we use nuts, but if you like you can add some oil with neutral taste.
Combination of vegetables and fruits can be really good, and this recipe is a proof of it:)
