Vegetable Chicken Rice : Sunday Vibes! (Have nothing to eat? Taste our juicy veg chicken rice to fill your soul!)

    Hey Hivers! How are you All? I hope all of you have enjoyed weekend a lot and I did it too. I always Love to do cooking on weekends. As it was Sunday then how is it possible not to share my today’s recipe with you all. I had a lot of household work to do. Like changing arrangements of my room according to the changing weather. It is becoming hot day by day now. We decided to remove mattress beds and replaced them with iron beds. Both of us were hungry as we were with fast. So I decide to make rice which is the most favorite dish of my husband. After completing my other chores, I started making this dish. Rice is rich source of carbohydrates, the body’s main fuel source. Carbs can keep you energized and satisfied. Moreover, it is a rich source of Vitamin B. Addition of vegetables makes it more delicious and nutritious.
    Let’s start the recipe:
    Ingredients:

    Chicken shreds 300g

    Rice 400g

    Green capsicum 2 Medium

    Pea 100g


    Onion 1 large
    Spices:
    Salts to taste
    Red chili 1 table spoon
    Green chili 4
    Garlic and ginger 1.5 table spoon
    Procedure:


    At first, I soaked the water for half an hour. Then I boiled the chicken and made shredded it.

    I cut the capsicum in rectangular and square shape.





    Firstly, put a pan on medium heat and add chopped onion in it. Sauté it. Spices like cumin, cinnamon, cardamom and cook it until it softens. Add ginger garlic paste and salt in it. Add peas and cover the pan with lid for few minutes until it softens. Add capsicum and leave it for more few minutes.

    Add chicken shreds and cook it. At last, add water double to the rice and heat it until bubbles rise. When it comes to boiling add rice in it. When few inches of water remain then cover it with lid until it cooked properly. I served it with potato chicken cutlas.

    Any other day I will share the recipe of cutlas. It is a very easy recipe and needs very less time to cook. My better half liked it a lot and admired me. We had it in Iftar.
