    Good to be with you again this weekend bringing some delicious side meal for your lunch or dinner as you relax enjoying in wellness.

    Today’s recipe a crisp on the outside and fluffy on the inside roasted potatoes πŸ₯”. An easy side dish that goes well with pretty much any meal πŸ₯˜

    All you need do is add your favorite seasonings based on what’s in your spice cupboard or what herbs 🌿you have in your pantry or garden πŸͺ΄ fresh herbs. Here I have used crushed garlic πŸ§„ some native herb 🌿and squeeze of lemon πŸ‹ for sour taste . Crispy and fluffy.

    I prepared this oven roasted potatoes as a side for porridge beans lunch πŸ₯™, very easy to make so that you can have a delicious side without much stress but minimum work. You can use dried herbs 🌿 but if you have fresh in your garden or pantry its all good to go.

    And using garlic in roasting potatoes is everything since the aroma infuses inside as it roast on but the high temperature can cause fresh garlic to burn so you can as well use garlic powder if you have one in place of fresh.

    This recipe is a delight on its own apart from pairing it as side meal πŸ₯˜. Full of aroma and very appetizing invitingly.

    Here I share the step by step with you.

    INGREDIENTS:


    1 medium size sweet potatoes
    1/2 of a lemon
    Few leaves of native herb
    1/2 teaspoon of dry thyme
    1/2 teaspoon of curry powder
    1/2 teaspoon of chili powder
    1/4 salt to taste
    3 cloves of fresh garlic
    1 teaspoon of margarine
    2 tablespoons of veg oil

    STEPS FOR PREPARATION:

    Step 1.

    First I will cut the potatoes in rounds for easy peeling and dicing it into cubes shape.

    Step 2,


    Here will wash the potatoes and soak it for 10 minutes to remove some starch as above.

    Step3.

    I will wash and slice the herb 🌿,

    then peel and crush the garlic as well. Here above.

    The garlic and the herb readily here.

    Step 4.

    Next we drain off the water from the potatoes and readily will want to add the spices and herbs here.

    Will add the salt, chili powder, thyme and curry here.

    And here the garlic, herbs and the margarine.

    Step 5.


    Will add the vegetable oil and stir properly to mix them thoroughly.

    Step 6.

    And will glaze the pan here taking in the potatoes for roasting.

    Then squeeze the lemon all around it.

    Step 7.

    Will bake and toast the potatoes for 30 minutes on 230 Celsius .

    To be honest this is indeed a delightful side dish or meal πŸ₯˜ if you prefer. You can use any kind of potatoes while making this recipe including red skin, russets, yukon gold .

    My mum taught me to always soak cut potatoes if time allows to help remove some starch which enables them crisp while being fluffy.
