Introduction: Ntu ngu is the ash made out of the husk of palm trees bearing fruits after harvesting the fruits and removing the palm fruit for processing, the husks are gathered together and left to dry up under the heat of the sun, for days and the burnt to ashes for collection and usage.
Edible potash sauce is one of the ingredients used in the preparation and cooking of abacha usually know as African salad and isi ewu recipe of the south eastern people of Nigeria
This Edible potash sauce "Ngu or ncha as the Igbo people of Nigeria call it" is prepared with at least two different methods with a slight changes to their preparation methods.
With the exception of the use of mortar "ikwe" is is prepared as follows
Method 1
Step 1
Get the edible potash and measure up some quantity which you need and add it into a bowel and pure water inside the bowel to sieve the water after mixing it up and allowed to suspend, separate the water from the supernatant and collect the water you sieved out of the edible potash and discard the supernatant.
Step 2
Mix the edible potash water with oil which makes it cuddle and thick, after you must have added the blended dry crayfish calabash nutmeg, Maggie and table salt, the edible potash sauce is ready for consumption with your African salad or is ewu or yam, depending on what ever you want to eat the sauce with.
Method 2
Ingredients needed:
- Fresh okra
- Dry pepper
- Ehu "calabash nutmeg"
- Edible potash water
- Ogili Igbo
- Red oil
Procedure:
Blend the ehu "calabash nutmeg" and the pepper together.
Slice up the okra and grind it very well.
Put the blended okra in a bowel and dissolve it inside the Edible potash water.
Add the red oil into the mixed Edible potash water and blended okra and mix rigorously till they homogizize.
When you have gotten the consistency you need in the mixture, you can then go ahead and add the ingredients you blended together with ogili Igbo and dissolve it in the mixture and ensure that they are well mixed, then go ahead and add little salt to the edible potash sauce and mix till it is well dissolved in the mixture "ngu" then your edible potash sauce is ready for use.
