Nutty Maple & Cinnamon Granola - Plantbased

    There is only so much Bran Flakes one can eat for breakfast! Day after day...after day. Yes, it for sure does the job of providing the daily fibre requirements, but I've had my fill of that and needed a different source of fibre!
    They're tasty, tasty, very, very tasty, they're very tasty!

    Not so sure of that, so I decided to make my own Granola - also rich in dietary fibre! The clumps of mass-produced Granola are way too hard, enough to break a tooth or knock out a filling!

    My computer crashed a couple of years ago, in the days before I had Dropbox. I had not done a backup of all my folders, and my Recipe folder was one of those! I had hard copies of most pages but had given some away, and those are lost forever. The page that held my divine Granola recipe was one of the fatalities!
    I had to find a new recipe, so I went hunting online; this recipe sounded a lot like my old one, and that is what I used. The granola did not form too many clusters. My fault; I had not pressed the oat mixture down before toasting in the oven, so of course it could not clump together!

    Granola, of course, has many health benefits. Oats and nuts are filled with fibre, rich in heart-healthy fats, lower the bad cholesterol, and contain antioxidants. Maple syrup is packed with Vitamins and Minerals, and although it is a natural sugar, care must still be taken by diabetics.

    The final result is absolutely delicious: a not-so-clumpy nutty Oat Crunch with Maple Syrup and Cinnamon, toasted Cashew and Pecan Nuts, Mixed Seeds as well as Dried Fruit. Great to eat dry as a snack or as a breakfast cereal with a plant-based Milk like Almond, Soya, Oat, or Macadamia.

    Recipe

    with a couple of adjustments

    • 1000 ml Rolled Oats
    • 100 grams Cashew Nuts
    • 100 grams Pecan Nuts
    • 150ml Mixed Seeds
    • 5ml Cinnamon
    • 5ml Himalaya Salt
    • 125ml Coconut Oil
    • 125ml Maple Syrup
    • 5ml Vanilla Essence
    • 200ml Dried Fruit - raisins, sultanas, and candied citrus peel

    Dry ingredients - oats, seeds, nuts, salt, and cinnamon

    Liquid ingredients

    Coconut oil, maple syrup, and vanilla essence

    Place dry ingredients into a large oven pan and stir to mix

    Melt coconut oil, add maple syrup and vanilla, pour over dry ingredients, and mix well

    Press down and bake at 160°C for approx 30 minutes; stir halfway through the baking to prevent burning.

    Bake a little longer if it has not reached the desired golden brown colour

    Leave in oven to cool, and store in a sealed glass bottle.

    Delicious served with berries and plant-based milk or vegan yogurt.
    Also makes a great topping for a quick apple crumble - stew apples, place in dessert bowls, and top with this nutty granola.
