Good Memories of Coconut Pie ... 🥥 🥧

    Suddenly, one morning last week, I woke up with a hankering for coconut cream pie....

    Little did I know that today, May 8, would be “Coconut Cream Pie Day”.... my inner clock must be off a little.

    Do you have an inner Pi clock ?

    To all those who celebrate the High Holy days .... Happy Coconut Cream Pie 🥧 Day !

    For some reason when I think of coconuts I think of my years living on the beach. Those were the days. Does anyone else associate the sweet smell of coconut with a certain time in their life ?

    It’s incredible how our memories can be triggered by certain smells, aromas, fragrances, ....

    Cotton Candy, Apple Pie, Coconut .... hmmmm usually sweet.....

    Shortly after gaining popularity in Europe, coconut took the United States by storm when a Philadelphia flour miller received a shipment of coconuts as payment of a debt from a Cuban businessman. In 1895 he set up a factory for shredding and drying his coconut meat and singlehandedly put coconut into the hands of American homemakers and commercial bakers and candy makers. Recipes for coconut cream pie start showing up in cookbooks almost immediately, and by the early 1900’s coconut custard and coconut cream pie was everywhere.

    What a wonderful holiday ... all those coconut cream pies being prepared today. I can see them all. All the joy they will bring... I can’t wait for lunch now. I’ll eat a lot of coconut today.
