Porridge beans with unripe papaya garnished with pumpkin leaf

    Have you tried combining unripe papaya with the creamy texture of porridge beans?,
    It is not just savoury but a nutritious meal that is perfect for a filling breakfast or lunch.




    My husband told me a story of how the brother was very sick and was diagnosed with anemia,
    Someone advised them to always prepare unripe papaya with porridge beans for him as it will help in rebuilding the blood percentage .

    They agreed and keep preparing it for him but note,
    While he was eating this sumptuous meal, he also took his medication serious and he recovered as quick as possible.

    My husband told me how every member of his family came to love this meal and how it became a normal meal for everyone in the family (his mom prepares it almost all the time).

    After he narrated the story, I realized that the dish was vegan and I could also prepare this dish for my vegan friends on hive and as well have a taste of it too (this is my first time eating unripe papaya with porridge beans).



    Ingredients needed

    ❤️1 cup of beans
    ❤️ 1 medium sized unripe papaya
    ❤️1/2cup of palm oil
    ❤️ medium sized onions
    ❤️ Pepper to taste
    ❤️ salt to taste
    ❤️ Small sized Ginger
    ❤️ Enough water for cooking
    ❤️ 4 fingers of pumpkin leaf

    I had both ripe papaya and unripe papaya at home , so i decided to cook with the unripe and serve the dish with the ripe papaya .



    How to prepare

    • Step 1: I separated the beans from the beans chaff and wash with clean water and salt, after which I parboiled the beans for 3minutes and washed it again.

    This process is avoid stomach ache after eating the beans.

    • Step 2: I cooked the already parboiled beans again but this time, I allowed it to boil till tender,
      I added some salt after the beans has softened and allow it for continue boiling.

    • Step 3: I washed the unripe papaya with salt and clean water,
      I cut it into my desirable shapes and set aside,
      I also cut the onions and ginger and set aside too,
      I also wash my pumpkin leaf with salt and water before slicing it with my knife.

    • Step 4: now is time to add the unripe papaya,
      I added the unripe papaya, onions, pepper and ginger and some natural blended spice with my palm oil and allowed it to continue boiling.

    • Step 5: I stir in-between until it forms it's porridge then I added the pumpkin leaf for garnishing and extra taste.

    My porridge beans with unripe papaya is ready to be enjoyed.

    I must confess that it's worth trying,
    My sister made me laugh when she said that they unripe papaya taste like unripe tomatoes 😁.
    I enjoyed the creamy , savoury taste of the porridge beans,

    My aroma of this delicacy made me wished to eat it before dishing it out, it's aroma was inviting and tempting and anyone who love beans would surely fall for it.
