    Hello everyone,

It’s me again. Today we are going to cook a simple breakfast dish I made from my garden spinach.

A few days ago I shared some updates on my garden at @gardenhive https://peakd.com/hive-140635/@luckylaica/my-march-vegetable-garden-update. I promise that I will think of some recipes to make use of them. Today I come home and have to cook food for the family. I had this leftover fried fish and thought of remaking it into a soup dish and one thing I thought I was making was kaldiyo

Kaldiyo is a Cebuano term for an eggdrop soup in a simmering broth. This time we are going to use our left-over fried fish and my garden spinach to make some stock.

    Here are the ingredients

    spinach tops

The first thing I did was to cut some spinach tops from my garden.

Then I prepare the other ingredients which are the two leftover fried fish, two pieces of eggs, tomatoes, garlic, and spring onion. Also other ingredients are water, salt, cooking oil and seasoning.

    Steps:

First step was vegetables and spices were washed and sliced them in my desired sizes then I shredded the fish. I also make sure to remove all the bones so it would be convenient to eat.

In a heated pan, I put oil and sautéed the garlic until golden brown.

Then I followed the sliced tomatoes together with the shredded fish and sautéed them until the tomatoes were translucent.

The next step is to put eggs as the main ingredients why we call this dish kaldiyo. This time I cook this differently. I did add eggs before adding water to boil because I like how eggs form rather than adding liquid first.

After adding 2 1/2 cups of water I then season it with salt and of course my all-time favorite seasoning magic sarap to taste.

Lastly, I added the the spring onions and my homegrown spinach and brought it to a boil for at least two-three minutes not to overcook our vegetables.
