Healthy, Quick & Easy Recipe for Brownie Squares

    Hey guys,

    It's been again ages since I shared something with you. If you wonder, I'm fine if you'd ask me. I'm just buzy with mom life and with a 3 months baby here, some days are really a challenge.

    Taking care of a baby, constantly, you can imagine that time spent in the kitchen is now a bit less than usual. I'm sure parents here can relate with what I'm saying :)). I do manage to cook something easy and quick pretty much everyday. Some days I can do more chores around the house and cooking, somedays I do nothing. That's just how things are :)).

    But last week I made this recipe again, it's my third time making it. Last year when I tried it for the first time, I took some photos to share the recipe with you. It was late Spring - early Summer, and we had cherries back then. Yumm!

    INGREDIENTS:

    • 3 ripe bananas
    • 1 cup plant based butter ( I had almond butter and peanut butter)
    • 1/2 cup dark cacao powder
    • vanilla (optional)
    • one egg

    I have this recipe from my friend. Her recipe doesnt have an egg in it, but I added it anyway because it's one ingredient that is very often used to brownies and plus, why not adding some more protein in here? (ohhh and plus: we have our own eggs, so it's different when you cook with your own homemade ingredients and food products)

    I would say you could replace the vegan butter with normal one but then I'm guessing it wouldnt be same recipe, same taste.

    This recipe requires no sugar, unless you want to add some. This is fully optional and actually my friend use to add 1/4 cup maple syrup or honey, agave. But I skip incorporate it because I'm happy with the result. I simply love it without any other sugar. The natural sweeteness coming from bananas its just right in my opinion.
    Also, I think she always uses almond butter.

    INSTRUCTIONS


    The instructions are only 5 minutes to make it. After mashing the bananas, mix every single ingredient and that's it.

    But first, mash bananas with a fork.

    Add one egg and butter. Mix it just a little bit and then add cacao powder. Mix everything well.
    You can skip the egg if you'd want to try the recipe wihout. Either way, it is delicious. The consistency maybe change a little, but not significantly.

    In a little cooking tray, align baking paper. Bake it for 20-25 min to 170-180°C.

    And this is how they turned out. To be even more good looking, I added a little bit of powdered sugar. The contrast is really nice.

    BUT not so FUNNY and (stupid) thing I did was to add the powedered sugar just a few minutes later after getting these out of the oven; so you can imagine that the sugar melted and couldnt be seen no more :)). So please dont repeat same mistake as I did. It's not that I didnt know the fact that you need to add the sugar after the cake is chilled out. I dont really know what I was thinking.

    Next day me and Caleb had an idea. We had some hazelnut chocolate bark, just a few little squares left. We tried to melt it and add it on top of the remaining brownie squares. Best Idea we could come with. Indeed, it perfectly wraps this recipe up. And the crunchiness coming from the hazelnuts is best thing ever.

    You can say this recipe is vegan if you cut off the egg. Also, it is gluten free, flourless, sugar free.

    My kid enjoys these brownie squares. The bitterness coming from dark cacao is strong and not everyone like this, but my kid does because he's used to have chocolate bark 80%-85% dark. That's the chocolate we use to buy. If you want a more "light" bitter taste, you could try it with not so dark cacao powder and maybe add a little bit of maple syrup or agave.
