Making Yellow Mulberry Soup A.k.a Veronica Comforter

    When I was younger, I would always wonder about this name, Veronica Comforter, and why it's a name given to a plant instead of to women. And I guessed that this could be as a result of its many benefits and you know, I was right. When I asked Dad why he loved the soup so much, he would say the same thing, "the benefits are numerous my dear, it is very good for the heart and the body".

    As an adult, I now understand why it was his favourite and made it mine too.

    I want to quickly give a rundown of its many benefits of both the fruits and its leaves.

    Common name is Giant Yellow Mulberry.

    Botanical name is Myrianthus Arboreus.

    It is a plant native to tropical Africa.*

    Lowers cholesterol.

    Controls diabetes.

    Prevents Cancer.

    Aids digestion.

    Supports eye health.

    Maintains alkalinity of the body.

    Rich in vitamins A and C.

    Just to mention a few.

    At every point in time, we always had this plant in my compound, my Dad made sure of that.

    So the last time I was home, I made a soup from the leaves of this plant and it was very enjoyable as usual. 😋

    Follow me as I walk you through making this simple, delicious and medicinal soup;
    The whole process will speak for itself in these Photos below. This is a minimalist version of the soup.😊

    Red oil.

    Yellow Mulberry leaves with onions.

    Seasoning and meat.

    Fish, pepper and dried shrimps.

    The pot is on the fire with water and my seasoning.

    I bring to boil and add all the other ingredients with the exception of the leaves.

    Here everything's boiling homogenously.

    Now is the time to add the Yellow Mulberry leaves with the onions.

    Yeah, it's all cooked here.

    Ta la la The soup is ready. Yummy yummy 😋

    This is 'Eba', grated and fried cassava which can be used to eat the soup. We call it 'swallow' in this part of the world because you have to swallow it ☺️
