Fresh soup from a combination of spinach and pumpkin

    Hello friends! Today I want to share one of my daily menus at home, which is fresh vegetable soup. This time I combine two types of vegetables in one dish, namely spinach and water pumpkin. Spinach is the most commonly processed vegetable as a daily vegetable menu at home, it is easy to get and rich in nutrients. Not only spinach, I want to combine it with water pumpkin to add flavor, it happens to be in the refrigerator, rather than not being used so I thought of mixing the two. Vegetable soup can be adjusted with the ingredients available at home. And can be combined with various vegetables according to your preferences.

    My homemade vegetable soup is very simple, does not require many ingredients and does not use fine spices. Okay, let's go straight to how to make it below.




    Ingredients needed:

    • 1 bunch of spinach
    • 1/2 water pumpkin
    • 1 stalk of celery
    • 4 cloves of shallots
    • 2 cloves of garlic
    • 1 tomato
    • 1/4 nutmeg
    • 1/2 tsp mushroom stock
    • 1 tsp salt
    • 500 ml water
    • Cooking oil for frying



    How to make:


    First: pick the leaves and wash the spinach. Next, peel and cut the water pumpkin into small pieces

    Second: prepare the seasoning ingredients. Peel the shallots and chop them thinly. Then crush the garlic. Cut the tomatoes into pieces. Chop the celery leaves

    Third: heat the water until it boils. Put the water pumpkin in first with other seasonings such as tomatoes, nutmeg, mushroom stock and salt, let it boil. After that, add the spinach, stir and let it wilt a little, add the celery leaves, stir briefly and turn off the stove

    Fourth: heat the cooking oil in a frying pan, saute the shallots and garlic until fragrant. Next, add the fried onions with a little oil when frying the onions into the boiled vegetables. Mix well and ready to be served in your serving bowl

    Now this is the spinach vegetable soup with a combination of water pumpkin is ready. This vegetable soup has a fresh and light taste. And the distinctive aroma of fried onions is what makes this soup very tempting and has a savory taste.
