Turned out to be a day far from plan. Did want to ride and walk Seven Mile Beach NP. My wife headed off to her craft group leaving me to look after the dog. Never a problem as she is a lovely dog.
First walk - a long walk around the suburb before my breakfast - hibiscus on the way
Art on the bus stops - surfers against the backdrop of Coolangatta Mountain - artist was out at sea
Was a few more walks with the dog before my wife came home.
Did strim the lawn as we are going home tomorrow
Quiet afternoon reducing sauce for the beef short rib dinner I made for my son
Prep started yesterday - beef short ribs, balsamic vinegar, tomato paste, stout, garlic, onion, celery, thyme, oregano, smoked salt and pepper. Bung inna cryovac bag and sous vide for 26 hours at 170F
Ready, steady cook. Pour the liquid into a pot and reduce to one third. Took over an hour and a half
Load up and drove to my son's place. I promised that we would bring all we needed
Hibiscus from his garden
Cooked sausages, boiled some baby potatoes, my wife made salad, browned the ribs on barbecue with the reduced sauce
Did get to spend some time with my granddaughter - I sit on the floor
She sits on the floor. Slowly breaking down the barriers
Dinner worked out really well. The ribs were melt in the mouth tender - sauce was good. Rich. Good to see my son and Scarlett's mum smash two each. Good to see Scarlett enjoy the chicken sausage.
Was worth the effort to make something special. Was worth the 30 minute drive each way. Small wins mean miles and smiles
