This morning when I woke up I decided to invite my mother and siblings to my house for lunch.
I had some pieces of chicken in the freezer, so I decided to cook Barshak Pilu with chicken.
To cook the chicken, I took the chicken pieces out of the freezer and put them in the pot. I considered one piece for the number of people. I put a whole plant of garlic next to the chickens and peeled an onion and put it in the pot.
I roasted two spoons of tomato paste in a little oil and poured half a glass of water into it.
After the water boiled, I poured the fried water and paste on the chicken pieces with a spoon. I added a little salt and black pepper to the food and put it in the pot and let it cook slowly on low heat.
Now it is the turn of pilaf.
I put a cup of rice in the pot for the number of people. After I washed it with cold water several times, I poured cold water on it, 2-3 cm above the surface of the rice.
I put the pot on the heat, but we don't lower the heat from the beginning to cook the rice.
(Today I decided to light two candles at the lunch table. I love candles.)
Add enough salt along with a few spoons of oil. Let it boil and let the water dry.
When all the water in the rice pot has evaporated and it is finished, we move the rice with a little spoon, reduce the heat and put it in the pot.
Let it brew for 40 minutes and our pilaf is ready.
As long as the rice is cooked, it is the turn of barberry.
First, we soak the barberries in a little of it so that if there is any dust, it is washed and the barberries are cleaned.
We pour a little oil in a container before it gets hot, pour the blackberries on the oil along with a spoonful of sugar, and stir it so that it does not burn. We only heat it a little. I poured a spoonful of water and saffron that I had prepared earlier on the barberry to make it more colorful.
After the rice is cooked and ready, put two ladlefuls of rice in a bowl and pour saffron liquid over it so that the rings are also colored.
Now it is the turn of the dish.
After putting the rice in the plate, we decorate the surface of the rice plate with barberry and saffron rice.
Along with the main dish, I used lettuce salad, pickled cabbage and carrots, a little yogurt and cucumber.
