New way new taste roasted veggies and pasta.. Meatless Monday.

    Hello, community and hive world greetings.
    This time I am sharing my tutorial about a new way to make pasta for dinner. this recipe looks like a regular pasta salad but with a twist by using ideal ingredients using them cooked or roasted making a totally different taste and delicacy. It can be suitable for lunch or dinner in any season, and warm or cold weather. The ingredients I used are that which I found in the fridge, some fresh and some a little bit old.

    Ingredients:
    1/2 cup cooked brown chickpeas
    2 sweet orange paprika
    10 cherry tomatoes
    25 green beans
    1 small carrot
    1 red paprika
    1 green squash
    1 apple
    1 small red onion
    3 mushrooms.
    1 cup whole-meal pasta
    1 tbsp. olive oil

    1 tbsp. olive oil
    1 tbsp vinegar
    1 tbsp mustard
    1 slice of frozen lemon
    2 basil leaves
    1/4 tsp oregano
    1/4 tsp black pepper
    1/4 tsp thyme
    1 tsp salt
    1 tbsp. sugar
    5-6 walnuts
    2 tbsp. pumpkin seeds.

    Clean wash and chop all vegetables including mushrooms in slices or bite size or chunks.
    I chose slices that look nice and sauté easily

    the apple, cherry tomatoes, frozen lemon slice onion, and 1/4 paprika save separately.

    In a skillet add oil.

    After the oil gets hot add squash carrot and paprika slices.

    sauté them until they are tender.
    Remove them from the skillet.

    In the same skillet add mushroom slices and saute them for 2 minutes or just until they get juicy.

    Add green beans and cook them with mushrooms.
    when tender remove them from the skillet.

    keep them aside and roast walnut and pumpkin seeds in the same skillet. switch of the heat.

    In another pan cook the pasta adding 1 tsp salt.
    When cooked drain the water.

    make a dressing from the chosen ingredients
    In the bowl add mustard, olive oil, vinegar, sugar, salt, spices thyme pepper, and oregano mix thoroughly.

    Here we have roasted pumpkin seeds, walnuts, chickpeas, and dressing.

    Chop lemon slice and basil leaves.
    Now mixing all together.

    First cooked pasta and 1/4 tbsp. olive oil.

    All roasted vegetables

    Mix them

    Add seeds and chickpeas.

    add the cherry tomatoes, onion, apple, lemon and basil.

    pour on the dressing

    Give a nice mix.

    The salad is ready. garnish with walnuts on top and serve.
