Snickerdoodle Cookies for Hubby - by Sunscape

    Another rainy day so baking seemed like a good idea. I haven't made Snickerdoodle cookies in a long time. Well, of course, my husband thought that was a grand idea with his sweet tooth.

    " Snickerdoodles"


    Recipe
    1. Sift all dry ingredients together, and set aside.
      3 cups (375g) all-purpose flour (spooned & leveled)
      2 teaspoons cream of tartar
      1 teaspoon baking soda
      1 1/2 teaspoons ground cinnamon
      1/2 teaspoon salt
    2. In another bowl, blend the wet ingredients until creamy with a blender.
      1 cup (226g) unsalted butter, softened
      1 1/3 cups (267g) granulated sugar
      1 large egg + 1 large egg yolk
      2 teaspoons vanilla extract
    3. Combine the wet ingredients into the dry until a soft dough is formed.
    Topping

    Mix the sugar and cinnamon together in a small bowl for the topping.
    1/3 cup (70g) granulated sugar
    1 teaspoon ground cinnamon

    Once the dough is prepared, roll the cookie dough into 1-inch-sized balls, Roll the dough balls in the cinnamon-sugar topping. Sprinkle extra cinnamon sugar on top if desired.

    Preheat oven to 375°F (190°C). Line two large cookie sheets with parchment paper or silicone baking mats. Arrange the cookie balls 3 inches apart on the baking sheets. Bake the cookies for 10 minutes, remove them from the oven, and let them sit on the tray for two more minutes.

    Transfer the cookies to a cooling rack and enjoy them fresh for up to 7 days, if they last that long in your home. :-)
