My sous made a solid bowl of Mee Bandung some time back. There were prawns and chicken breast slices, making it a lighter take on the classic. Some fresh vegetables were added in, giving it a nice balance and a bit of crunch.
Normally mee Bandung goes with beef slices but since there are some of the staff that doesn't eat beef, we changed it to chicken. A good substitute but if you do take beef, beef slices would be the protein of choice.
The broth was rich, thick, and carried that signature sweet, savory, and slightly spic taste that makes Mee Bandung such a comforting dish. The noodles soaked up all that goodness, making every bite satisfying!
