Greetings, my friends and fellow food lovers. I've heard people say that sausages are not good for our health as they are considered junk food. However, if we use certain ingredients, we can turn them into a healthy food option. In India, we have a version of sausages called "gatte" or "kebab" in small sizes. Today, I would like to share how we can make vegan sausages from scratch using healthy ingredients. of course, this food is not eaten alone I am making the dinner rolls as well. And they became hotdogs healthy hotdogs. This is my entry for the "Top Chef Weekly Contest" by @qurator.
Ingredients:
1 beetroot
1 carrot
1 cup soya chunks
2 tbsp seaweed
2 tbsp dried yellowlegs-mushrooms
1/2 cup gram flour
1 boiled potato
2 tbsp coriander
1/2 onion
5 cloves of garlic
1 ts salt
1 ts black pepper
1/2 lime
1/2 ts hot chili powder.
1/2 tbsp sunflower oil.
Preparation:
make powder of seaweed and mushrooms and keep aside.
soak soya chunks in hot water for around 4-5 minutes.
Drain water.
Add in mixer
Make mince.
Finely chop onion coriander, ginger, and garlic.
Grate carrot and beetroot add chopped onion coriander and ginger-garlic. Add soya mince.
Add coarse dried mushroom powder.
Add seaweed.
Squeeze lime juice and add salt pepper, and chili powder.
Add mashed potato and gram flour.
Mix all ingredients thoroughly. Use a blender or hand.
Make a nice dough of all the ingredients. cover and keep aside for around 1 hour the dried mushrooms and seaweed need time to soak in the mixture. I kept it longer to make dinner.
Meanwhile, make some bread rolls for sausages.
Wheat flour 2 cups 1 ts sugar, 1 ts salt, and 1 ts dried yeast.
Mix all using water to make a soft dough. keep aside.
when the dough became double in size.
Make appropriate rolls according to your choice.
Preheat oven to 180C and bake the bread rolls for around 30 minutes.
Roll the vegetable mixture into the sausage shapes.
I don't have a steamer, but here are some tips for steaming vegetables or food. You can use a regular pan and place a plate or small stand in it. Then, place a strainer on the stand and pour the appropriate amount of water into the pan. Spread a butter paper or banana leaf on the strainer and place the food on it for steaming. Cover it up and you're done.
Cover and steam sausages. for around 10 minutes.

Using 1/2 tbsp oil fry them in a frying pan.
Serving preparation:
Using mustard, homemade Tomato ketchup, and fried onion prepare them for serving.
first mustard on the bread, then onion, sausages, tomato ketchup, and mustard.
Or homemade brush mustard on the tortilla, place sausage, ketchup, mustard, and onion.
Serve how you want.
Better with some fresh vegetables.
