Easy Ways to Make Traditional Putu Bambu Snacks

    Traditional snacks always have their own charm in every dish they show, the shape, aroma and taste are identical, making these snacks never far from everyone's target.




    My curiosity about one of these traditional cakes has been around for a long time. However, the cake mold was difficult to find, so I didn't dare try it before. This snack is known as Putu bamboo, which is a traditional snack, prepared with rice flour, sticky rice egg and pandan leaf starch water. Then add palm sugar as the filling. This putu itself is cooked in small bamboo so it is known as putu bamboo. However, bamboo is not easy to find, we have to make it ourselves. Therefore, it makes me hesitate to process it. However, yesterday I found something encouraging on the internet that did not use bamboo. How happy I am that I can finally make a new breakthrough for the putu recipe this time.

    I used a mold I had at home, but many people also do it using banana leaves. In my opinion, you can do everything, the most important thing is to make sure the recipe matches what is needed to make this snack.

    Well, the ingredients for making this cake are very simple, but one thing that I think enhances the quality of taste is pandan starch essence which makes it even more distinctive and fragrant. Here are the ingredients you need to prepare at home!




    Putu Basic Ingredients

    150 gr rice flour
    50 gr sticky rice flour
    1/2 tsp salt
    100 ml warm pandan water
    Brown sugar to taste




    Making putu bamboo requires the use of hot water, so here I use pandan juice from 2 pandan leaves which I then stir with warm water. Well, enjoying putu without adding toppings is not complete, putu bamboo is synonymous with coconut topping and a sprinkling of granulated sugar on top. So, here are the topping ingredients you need to prepare.

    Enough grated coconut
    ½ teaspoon salt
    2 tablespoons granulated sugar




    Creation Procedure


    Step 1


    Cut the pandan leaves then blend with 50 ml of water, blend until smooth.

    Step 2


    Then strain the pandan water and mix it with warm water, or you can also cook the pandan water.

    Step 3


    All ingredients are ready to make putu dough, mix rice flour and sticky rice flour.

    Add salt, then add pandan leaf water little by little until it forms lumps like in the picture.

    Step 5


    Then strain the lumpy mixture until the mixture has a smooth texture, now this stage of the process requires extra patience. Because when we sift the dough we have to do it little by little.

    After getting a smooth flour texture, I prepared the mold and palm sugar. First I greased the mold a little with cooking oil.

    Add the dough into the mold, spread it evenly and don't press the dough. Then add palm sugar according to taste.

    Next, cover it again with the dough and don't press it at all.

    Steam the dough in a preheated steamer. Cook for approximately 15 minutes, when it is cooked the dough will stretch itself in the mold.

    After the putu was cooked, I steamed the grated coconut, don't forget to add salt to the grated coconut, steamed for approximately 5 minutes.

    Serving Suggestions

    So, once the putu is cooked, I serve it on a plate, then I sprinkle it with steamed coconut. Then also add granulated sugar so that the putu is like the original recipe in general. Yeaay putu cake is ready to be enjoyed, this is a snack for our family to break the fast.

    Very satisfied with the results of the putu which is very beautiful, only the color is less green because I used real pandan juice. However, if you want it to be greener, you can add food coloring. As a result of this recipe, I got quite a lot of bamboo putu, namely 14 pieces. There's a lot, right? You know that evening after breaking the fast my mother and I started to taste this cake. To my surprise, my mother said this was very delicious, very similar to the ones sold in the market. He also teased me saying that I could open a stall selling putu. Haha, I was really happy, then I took one piece and started biting it, wow it was very soft and the palm sugar was really melty. The aroma is very fragrant, especially the combination of coconut as a topping is enough to make this cake tasty, sweet and really sticky.
