Matcha Chocolate Dipped Cookies

    4 days to go til weekends 🤣 I can't wait! I know the week just started, but hey, we can always use weekends, right? So, yeah, I can't wait 🤣

    I baked a very nice banana bread, yesterday, not teacake style, but sandwich bread style, toast the slice, spread butter to melt, that kind of banana bread. However, for today's recipe is these super good matcha cookies, first. My favorite. I can't control myself with these cookies, most esp when I have coffee or tea to go with, but even without, I know I can finish the whole jar 😅

    2.5 c flour
    1 tbsp matcha powder
    1 tsp double acting BP
    A pinch of salt

    2 eggs
    1 c sugar
    1 c peanut oil

    1 handful semi sweet chocolate chips
    1 tsp peanut oil

    In a bowl, mix flour, BP, salt, and matcha powder until well combined

    Using food processor, mix eggs, oil, and sugar until combined

    Pour eggs mixture into dry ingredients bowl, until completely combined, then scoop per tablespoon

    Bake cookies for 8-10 mins on preheated 350 F, cool on rack to room temperature

    Once cookies are cooled, mix chocolate chips with peanut oil, melt in microwave for 30 seconds, take out, stir, then melt again for 20 seconds, stir to complete melt texture

    Dip cookies and let stand on cooling rack until chocolate harden, then store in cookie jar
