FOODlog #1314: Ginger Steamed Barramundi

    Throwback to a busy last day of service before the Chinese New Year break.

    Served 50+ people of 8 total dishes of appts, mains, and desserts. It was a blocked out birthday event of one of our Malaysian comedians Dr Jason Leong Comedy.

    The most ordered item was our Seafood Yuzu Cappelini. A cold Cappelini dish tossed with a Yuzu sesame dressing and topped with Furikake, sansho powder, lump crab meat and tobiko, finished off with freshly grated lemon zest and chopped chives.

    Its normally served a little differently in terms of plating but for this event we went with this plating which is faster given the amount of portions we were serving.

    The plating has now become our regular way of serving this dish so I guess challenges often bring about a better and more effeciency way of doing things.
